Vegan Chili 4.1

Vegan chili so good that you won’t miss the meat.

Ingredients

  • 1 can of black beans drained and rinsed
  • 1 can of kidney beans drained and rinsed
  • 1 can of garbanzo beans drained and rinsed
  • 1 can of pinto beans drained and rinsed
  • corn
  • white onion, chopped
  • 2 bell peppers, chopped
  • 2 celery stalks, chopped
  • 1 can stewed tomato
  • 3 cups potatoes
  • 1 bulb garlic
  • 1 tablespoon chili powder, or to taste
  • 1 tablespoon dried parsley
  • 1 tablespoon dried oregano
  • 1 tablespoon dried basil
  • 1 tablespoon cinnamon
  • Corn to taste
  • 2 carrots, chopped
  • 1 cup baby bella mushrooms

Directions

  1. Chop and prep all ingredients
  2. Coat crock pot with oil of your choosing
  3. Cook on high for 2 hours
  4. Reduce to warm for remaining 4 hours
