
Vegan Chili 4.1
Vegan chili so good that you won’t miss the meat.
Ingredients
- 1 can of black beans drained and rinsed
- 1 can of kidney beans drained and rinsed
- 1 can of garbanzo beans drained and rinsed
- 1 can of pinto beans drained and rinsed
- corn
- white onion, chopped
- 2 bell peppers, chopped
- 2 celery stalks, chopped
- 1 can stewed tomato
- 3 cups potatoes
- 1 bulb garlic
- 1 tablespoon chili powder, or to taste
- 1 tablespoon dried parsley
- 1 tablespoon dried oregano
- 1 tablespoon dried basil
- 1 tablespoon cinnamon
- Corn to taste
- 2 carrots, chopped
- 1 cup baby bella mushrooms
Directions
- Chop and prep all ingredients
- Coat crock pot with oil of your choosing
- Cook on high for 2 hours
- Reduce to warm for remaining 4 hours
